Personally I am playing through it again (at least the 6th time) and these are the mods I'm using. Personally I always have NMC's Texture Pack as a 'base' and any mod that may edit/change textures it also has simply overwrites NMC's. So if EVE has texture files a, b, c, and whatever texture mod also has the same, and you install EVE after it and say yes to overwrite, it'll just mean EVE will replace those specific textures from that mod.

It's not necessarily a conflict in terms of it crashing your game or breaking either mod but simply it'll overwrite to some textures that have the same. There are a lot of great quest mods out there though. If you're looking for good quest mods, I recommend the Someguy Series (New Vegas Bounties 1-3 are the standouts) and Boulder Dome. I can play for 10-15 hours at a stretch without crashes now, before I'd be lucky to get through an hour without a crash. If you're looking to add some stability to New Vegas, pick up Borderless Gaming on Steam for $4. I also recommend DUINVv04, which take a little work to set up, but greatly improves the font style and sizing in-game. Will not change terminal or menu entries to fit, but does enhance your inventory screen by having a properly named pre-war train ticket in it. Incompatible with any other mods that change the Train Ticket to New Vegas. As someone who was disappointed with FO4, but thought the loot system was a huge improvement, I can't recommend this mod enough. Or even because you want to, but dont have the necessary experience. It's an iteration of Fallout 4 Quickloot which came out first but improves on it in a lot of key ways. Loot Menu adds the Fallout 4 loot system to New Vegas.
